That's been said often enough about the manpage itself. It's over-whelming, but we all need to keep coming back to it.

One small question what does -o actually stand for? I know it actions to carry on with whats to the right of -o, but not what it stands for

In the find command, "-o" is the OR operator. In the absence of an operator, "-a" (AND) is implied.

find exclude directory

To exclude "the dot directory" I assume you mean either of ./ ../ in general, tell find to always go one step down the hierarchy:
