clear recent list, edit reopened text file

I've had the OS for a couple of hours. I'm using the default programs.
1.) I made a text document. When I reopened it, it was in a viewer; not in an editor. I couldn't find how to re-open it for editing. I tried with a word processing document and that was fine. The text editor takes six seconds to load. Is that usual?
2.) I'd like to remove the entries from "recent" at the bottom of the start menu.
There's a heap more I need to know, but two is probably enough to start with.
