If speakers are in your display or a TV, it should be able to accept sound via HDMI. If you have separate PC speakers with only a pin jack or RCA connections for input, you could use an inexpensive HDMI-to-analog converter on the extra HDMI output, around US$20 or less, or on the same one using a 1X2 HDMI splitter.
I use a soundbar for computer audio.
It has HDMI Arc input.
Could I use one of the HDMI outputs on the mini pc to connect video to my monitor and the other HDMI output for audio to my soundbar?
I would expect so, but it's not something I've ever thought to try. I have only one PC that has more than one HDMI output. I don't really have any idea whether ARC could be helpful or not. Why not simply try? I can't imagine anything worse than simply no sound happens if it doesn't. You might need to swap which goes where, or configure sound out to go specifically to the particular output connected to the soundbar. Just try and see.
