You could use --set-selections options of dpkg ie.
echo "<package name> hold" ¦ dpkg --set-selections <package name>
To put the package on hold so it will not be updated. This is for Debian, I see you have Redhat listed as yours there has to be something similar in it for apt-rpm I would assume.
