Creating a linux firewall + server + etc..

hey guys I am trying to set up a server that can replace a router with ppoe features, which means that I need to be able to log in with ppoe with the network card to the internet and broadcast a dhcp with another network card, allso I need a firewall software that can make iptable easy to configure and act as a firewall, something to enchance iptable, the to run a webserver and etc.. I have tryed e-smith whcih is based on sme server, it is good but ports are not taht customisable and I cannot add more function to the server, I have tryed Fedora Core 1 and could not set the dhcp server, Fedora Core 2 and had the same results, RedHat Enterprise server 3 AS same result, K12Fedora which is based on FC 1 but it had more features and had the same result, the system never made dhcpd.conf file in the etc folder and when I puted one in, it did not work. I found guides on creating one but still nothing happend.
Can anyone help me or give me an advise on which linux is best to install to have server features easy to configure + including dhcp, firewall, webserver, irc server, preferably gui mode or it could be in unix mode, but so that the firewall would be easy to configure, opening and closing multiple ports at once, forwarding multiple ports at once, allso webpage with php, mysql, perl, apache, ftp, etc.. which I can configure easily, and the ability to install extra webservises when I will find them, to have an irc file server, so I could access my files from work. allso the server should connect from one network card through pppoe, that is for adsl service which requires user name and password to log in. so the key features, are dhcp, firewall with openning and closing ports(and when I open my ports they should apper closed to the one who probes them, like linksys router does),web server, irc dcc server, and other server that might come handy.

thx.
