If you took the laptop motherboard out of it's plastic shell, how would it differ from a single board computer? To me, not in any significant way. It does have a BIOS that dictates somewhat how the board boots. I've never used U-boot, but my impression is that it normally loads &/or runs from flash memory. In most cases, there is no such equivalent on laptop motherboards, however since you say you want to port U-boot, that probably isn't an obstacle. In most cases, peripherals found on laptops already have working drivers. Adding just one driver for an otherwise unsupported piece of hardware sounds like a very noble effort.
