Which Linux is the most appropriated for educative purpose on Compaq Armada 1750?

Hi,
I'm working on a project where we want to install a couples of Compaq Armada 1750 (6333/T/6400/D/0/3) in a college so the kids could learn to write documents and to do some research on the internet.
For this we want to install Linux and OpenOffice on the Compaqs, but which Linux is the most appropriate one?
It has to be easy (the kids never saw a Computer before) and containing only a few programs like OpenOffice, probably something to edit a picture and a browser. But no games or anything else.
Right now, xubuntu is installed on the machines, but with too much programs. Is it possible and easier to uninstall some of theses programs or is it better/easier to install Knoppix or RedHat or ??
I'm a beginner with Linux, so thank you for helping me

Hi and welcome to LQ. Its probably easier to uninstall the programs you do not need from Xubuntu than installing new a new distro and dealing with potential problems that can arise from that.

if you were running a gnome desktop I would recommend using pessulus to 'remove' anything you didn't want the users to see or have access to.
