Looking for x86_64 OS that requires learning


Hi there, I've been using linux about a year but each distro I've used is basic like SUSE and Mepis. I've only messed around with them but I want to learn more about whats behind the GUI. I've read reading docs then installing Gentoo or Slackware can give you a great look at the CLI but I need a 64-bit OS. any comments or suggestions would be great!
