I'm a big fan of Slackware myself - it's rather hands-on but still simple (you have to make most changes via manual editing of .conf files in the /etc directory, but the files are all well-commented and fairly easy to get around).
Debian wouldn't be so bad either. Actually, you might be interested in installing Knoppix on your system - it's full-featured yet tries to conserve memory. |

Compiling gentoo is effortless, but it takes some time (lot of time;-)

Sarge is basically netinstall. After booting into linux select[*] Desktop environment
and it will go installing from net |

You can use jigdo utility to download DVD disks, but they are custom DVDs
