Centos / Fedora - whats the difference?

Can anyone point out what the difference is between these two distros.

Centos is build on Fedora, but is there any reason that makes it better?

I'd be using the OS for a home web server, and the odd desktop task like browsing the internet when my partner uses the main computer.

CentOS is a Redhat Enterprise Linux rebuild. RHEL itself has technology that comes from Fedora, so if you are familiar with Fedora, then you should find using RHEL and its clones fairly sraightforward. RHEL is a lot more stable than Fedora and has a longer product life support.
