Number of audio issues with Realtek ALC1220 (Gigabyte motherboard)
I just built a new PC using a Gigabyte B650I AORUS ULTRA and installed Debian. Nearly everything to do with audio is broken. After some tinkering with pavucontrol, I at least got simple playback to work through the analog output. I'm still having a number of issues.
First, plugging headphones into the headphone jack does not switch the audio to the headphones, and remains playing through the speakers. I know the switch is working, because I can see the state toggle between "plugged in"/"unplugged" in pavucontrol. In case it matters, the case is a MasterBox NR200 and the front panel audio jack is a combined headphone+mic jack.
Second, applications aren't picking up the microphone. When I plug my wired headset into the front panel audio jack, I see the microphone show up as "USB Audio" in pavucontrol and I can see activity when I speak. However, this device does not show up in any of my conferencing applications, like Slack or Google Meet. I do notice that the state of the microphone jack does NOT toggle between "plugged in"/"unplugged" when I plug the headset into the front panel jack.
Lastly, my Bluetooth wireless headset isn't working. Using the KDE bluetooth manager, I pair the device, but it shows an error: "The setup of ATH-M20xBT has failed". I close the wizard, and the device looks to be paired despite the error, but the icon for the device in the KDE bluetooth manager shows the generic bluetooth icon rather than the icon indicating it's an audio device. In the past, I've resolved this by removing module-bluetooth-discover from being loaded in /etc/pulse/default.pa and loading it manually after I log in. That doesn't seem to be working this time. I'm using a bluetooth mouse without issue, so bluetooth otherwise seems to be fine. I know it's not an issue with the headset, because I use it on another Debian system without issue. The journal for bluetooth.service shows the following error when I attempt to pair the headset:

That will show us the active and available profiles. It is likely that you'll need to set it according to your requirements via the 'Configuration' tab of pavucontrol.

You need to install inxi first. In any case you’ve now confirmed that you’re only using PA.

FWIW, here's a thread describing a similar error...

...and there it seems to be down to not being able to have two BT devices paired concurrently. If you unplug the BT mouse does this problem go away?

When you plug in the headset, examine the 'Configuration' tab in pavucontrol again. Can you configure the USB headset profile at that time? Make sure the mic is not muted and the level set as required.

To clarify my situation, I have two different headsets: A bluetooth headset, and an analog headset I've been plugging into the front panel combination headphone+mic jack. There is no USB headset, but PulseAudio appears to be naming my motherboard's on-board audio device "USB Audio".
The "USB Audio" device is available in the Configuration tab regardless of whether or not the analog headset is plugged in. I've set the configuration to "Analog Stereo Duplex" per some recommendations I've seen online, but the behavior doesn't change if I set it to "Analog Stereo Output". I've tried every profile with the headset plugged in, but no profile makes the audio come out the headphones. As for the mic, pavucontrol shows activity on "USB Audio", but "USB Audio" is not offered as an option in any application that records audio.

Thanks for the further clarification. Multiple issues in one thread can lead to a confusing discussion. I suggest starting a new thread for the BT issue.

I got the headset working. Here's what I did: - STOP using the KDE bluetooth manager and install blueman instead
- When pairing with the headset using blueman, I saw the following error in the journal for bluetooth.service: "a2dp-sink profile connect failed ... Protocol not available" - This led me to this thread: https://askubuntu.com/questions/1172...connect-failed
- First, I installed libspa-0.2-bluetooth: sudo apt install libspa-0.2-bluetooth
- Then, I added load-module module-bluez5-discover to /etc/pulse/default.pa and killed pulseaudio (it restarts automatically) via: pulseaudio -k
- At this point, only the headphones show up in pavucontrol. Going to the Configuration tab, I can change this to "Handsfree Head Unit (HFP)", and the microphone appears.
EDIT: In order to preserve the audio profile for the headset, find where module-card-restore is loaded in /etc/pulse/default.pa and add "restore_bluetooth_profile=true":
