Post Windows Applications Alternatives

I'm looking to replace all my Windows applications with (open source preferably) alternatives. Here's a list of programs I had and what I replaced them with.

MS Office XP with OpenOffice
AIM, Yahoo & MSN with Trillian Basic
MS Internet Explorer & Outlook with Mozilla
Windows Media Player with Real Player

I would like every one to list there favorite application alternatives on Windows and what other programs that you recommend. Right now I'm looking for something to replace Easy CD Creator. If any one has any good suggestions please list them.
