How much processing power does this plane really need? If it's recording whatever it sees, or is getting constant feedback from another computer, I'm sure you could set it up so the other computer does most of the non-critical stuff, while the plane just sends back its sensor's data.

In that case, I've heard ARM would work well; it seems to be the "de facto" standard for embedded stuff.
