Just looked at everything except for the MAN pages and the Book. Like what I see, and know the "basics" about operating GIT now.

That's just a pile of zip files; that's not what sharing code is about.
You don't zip it up - impossible to contribute.
Have a look at some existing projects on github to get an idea how things are done.

Last time I used github there were no such restrictions.
TBH, I don't believe there are now, you must be missing sth.
But you might want to consider gitlab.com instead.

You might want to set up ssh connections first, that makes pushing from your local repository much more comfortable.

Also, IIRC, when I signed up for github they offered me a tutorial that had me do exactly what you're wanting to do. It was a guided tutorial and is probably still an option for you.

It turns out, that the 25MB restriction and the folder upload issue is only with the website as far as I can tell. Other ways do NOT have this restriction. I just used the desktop app to put them as I now want them.

Essentially, you want the source code in a git repo, and not the compiled result.
And not zipped-up source code but the whole tree, all files.
