For those who are worried about Cloudflare, you can change the setting to "Custom" and use this non-logging DoH server from OpenNIC instead:

Is it possible to disable DoH in the GUI preferences?

The blog article shows a screenshot with an on/off checkbox, plus a provider drop-down which includes "Custom" as an option.

For most people the default is fine, but I disabled it so FF does not bypass my Pi-Hole DNS server which is my only issue with it.

Thanks TheTKS and boughtonp.
It was never enabled in the first place (I'm not in the US of A).
Some people are worried a future update might change that, and a user.js (or about:config) setting should override that.
Apparently the key network.trr.mode should be set to 5.
Both choices (GUI Prefs and about:config) have been persistent so far.
