According to that link and the contained commentary by Dr. Storer, humans (and probably all mammals) are unaffected by that protein because they lack the required receptors in their guts.

As for ice cream, I'm pretty much a Breyers loyalist, since I'm too lazy to make my own.

I doubt if it is gluten as such that is necessary for health. Our paleolithic ancestors ate mostly meat, green plants and roots, with perhaps a little bit of wild grain in late summer. They did very well without gluten. The main argument against the gluten-free craze is that it is a total waste of money for non-coeliacs. Any health risks associated with "clean eating" are more likely to be due to the lack of vitamins and minerals that whole grains supply.
