1. What is the difference from Hardware raid and software?
In hardware raid the controller card has its own processor to due the calculations that raid requires. In software raid those calculations are done by your CPU.
2. should i even bother with raid? or run the Raptors in normal SATA?
It depends on what you are trying to gain. If your thinking RAID0, I'd say don't bother.
3. should i load Linux drives for the SATA?
I don't understand the question.
4. In windows and u press F6 to load the drivers then setup the drives. should it be about the same where u see 1 large hard drive? i see 3.
You could set up linux to see one large hard drive, so yes that would be the same, but you wouldn't need to press F6. The install should allow you to create any software raid level you wish assuming you have the necessary number of drives.
