For "older" iPods (_not_ iPod Touch or the "newer" iPod Classics etc.) the best choises I'm aware of are Amarok (for KDE) and GTKpod (for Gnome). There are others too that use the very same library to access iPods, and maybe Rhythmbox can do it nowadays too. However the newest iPods (like Touch and the other new models) have a slightly different database management (somekind of hash checking is made I suppose, don't know since I don't own those models) so the same approach doesn't work with them that does with the older models. You know that Apple wants people to only use iTunes to manage their iPods, and that they don't offer iTunes for Linux. That means you're completely on your own on Linux, and even though the older models nowadays work smoothly trough libgtkpod (for example that), the newer ones still have some trouble. In iPod Touch's case, there are some solutions, but nothing "easy&clean&safe" I'm afraid.

If you own one of the new iPods, you can probably just wait, or get a Mac or a Windows. I suggest a Mac, because the Windows version of iTunes is probable to break things up badly. It did for me, anyway. Oh, and send a couple thousand mails to Apple that say that it sucks that they don't offer an iTunes or some other way of accessing iPods "natively" on Linux - considering that Mac OS X is closer to Linux than to Windows, but still they prefer to like Windows users over Linux users.
