How to migrate NTFS drives to Linux FS's

I have 15+ HDD's. They are all NTFS. I would like to convert them to a FS that is widely suppoeted my Linux (and possibly Windows). I would like to run a FS that is fast, safe and reliable in a server enviornment.

What is the best way to go about making this conversion? I have 5+ PC's (running XP pro - Sever 20003) available for the migration.

Thanks a lot!

copy all data off of drive, format drive, copy all data back. note that ext3 isn't "widely" supported by windows. it's possible to read ext3 under windows using third party modules, but it's not a prevalent practise.

I should have noted that I have a lot of DVD's ripped to my drives. Most are in ripped to multiple VOB's files, but I do have some ISO files that are the size of a DL-DVd (8.5 GB).

What are the advantages to HPFS?
