Fedora and centos
 
Hi there

I am getting a new box and I'd like to try centos, the data center will only install Fedora, Debian or freeBSD.

would I be able to upgrade to centos [with Fedora installed] once I get the server?

No - they are different branches of development.

CentOS is a clone of Red Hat Enterprise 3, which is a stabilised version of RH9 - two years behind Fedora Core. RH 9 had a different kernel, different device handling, didn't have SELinux etc. etc.
