Editing Gnome Menu

I am looking for a way to edit the Applications menu in Gnome. I installed Xine from an RPM and it littered my Applications menu with "Multimedia" folders and "Xine" programs in the "Preferences" and "System Settings" menus (where they clearly don't belong.) I would like to remove them but can't. "Remove this item" is grayed out when I right click on "Xine" and I read the page at the Gnome site but can't find the .desktop file that is adding the unwanted menu categories (folders) and items. I tried searching my drive for a file with "desktop" in the name and "multimedia" in the file but didn't get any relavent results. If anyone know where the file is or a better way to edit menu items, I would love to hear it.

I just read through it and it doesn't seem to help (unless I am missing something.) I have a pretty good understanding of how the menu system works but my problem is that I can't find the .desktop file where all of the Xine entries are being added. If I could just fine that, I could edit it that only Applications -> Sound & Video -> Xine shows up and not Applications -> System Settings -> Multimedia -> Xine or Applications -> Preferences -> Multimedia -> Xine.
