When you installed Redhat, it comes with sendmail. When you installed Debian, it comes with exim. Does it really matter why? . Anyhow, I think exim is a great and very easy smtp server. If you don't like it, un-install it and install postfix. Everyone has their own likes and dislikes over certain applications. If you don't mind, learn how to use exim. Setting it up takes like 2 minutes and details are all over the web.

I'm partial to Postfix, after i install Sarge, i install/configure postfix. No sweat! Either one does the job.

Its fairly easy to remove exim and install postfix using apt-get.
