which Sage version should I use for AMD 64


Do I use the I64 version of the kernel if I want to install it on my AMD 64bit 2800 Chip system ?

Depends, if you want to use sid you can go to
AMD64

If you were going to use sarge I would go with the i386 version, I don't believe that IA64 is meant for a x86_64 extended processor

IA64 is meant for 64 bit Intel Itanium processors, not AMD64 (x86_64).
