Which road should I pick?

I want to build my own Debian that stay with a repo that support longer about 5-7 years. But I'm in the middle road between Jessie & Stretch which nearly become stable. So I'd like some comments & suggestions for my decision between.

1. Should I stay & Debianizing latest stuffs for Jessie more longer from 2016 till 2018-2020?
or
2. Should I practice skills on Sid channel to prepare new Debianizing packages for Stretch release on 2017 till 2022?
or
3. Should make a siduction based distro to make a rolling release?
