See installed packages on a head-less box?

Hi all

I've just set-up a head-less debian webserver, and done a dist-upgrade. All is well, though its not a very powerful machine and I noted that perl and python had been installed. I'll not be using these, or similar packages, and would like to trim such packages from the server. However, I'm not to sure how to get a list of what's installed.

Does anybody know how I can either:
a) quickly remove packages I'm not going to need, or
b) view a list of installed packages so I can "apt-get remove" them?

Thanks!
