log in as root and edit /etc/X11/XF86Config-4

there you will see a section that looks something like this

Section "Screen"
Identifier "Default Screen"
Device "Generic Video Card"
Monitor "Generic Monitor"
DefaultDepth 24
SubSection "Display"
Depth 1
Modes "1024x768"
EndSubSection

if you have allready done this id try running
xf86cfg
and mess with your screen and video setting there

after you've made changes to the XF86Config-4 file, log out of Gnome and at the GDM login screen kill X (control-alt-backspace) to make it actually restart X using the settings you've made, then log in.
