Gnome 1.4 and mime types

Hello. I am running Debian 3.0. My question is did the Gnome team even bother to test if the mime types area works in the gnome control center? No matter what application I assign to a file type, it still wants to open that file with whatever it feels like opening it with. Does anyone else have this same problem? If so, do you know of a way to fix it?
