For downloading Debian Sarge, what is the right option for my PC?
 
My project specifically requires Debian Sarge and I don't know which option to choose. My PC does have am Athlon 64 processor, but i wanted others' opinions before I choose ia64:

[alpha][arm][hppa][i386][ia64][m68k][mips][mipsel][powerpc][sparc]

x86-64 is correct

I chose full DVD sets since my blank media are DVD+r. Do I need the four ISO's listed on this page:

I read that ia64 is Itanium and meant for Intel processors, but AMD Opterons have the architecture.

You just need the 1st dvd or just get the 1st cd.
You can install the other required packages with apt-get.

No it isn't.
You want the AMD64 version.
Ia64 is for Intel's 'Itanium' processors.
Why do you want Sarge specifically?
I seem to remember that AMD64 was a port under Sarge and not officially supported
until Etch.If you can't find a download for AMD64 you will have to use i386.

I know ia64 is not amd64, but did not see any other 64-bit thing there. There was some confusion in the terminology before.

ia64 is NOT x86_64, amd64 is, even on x86_64 Intel processors. IA64 is Itanium which is totally different from x86(_64).
