The documentation on the 1st CD is pretty comprehensive. You'll be amased at how far Linux has come since you last used it.

Debian uses apt for packages (if available) else you would download tar balls and go through the normal process. There is a specific section dealing with apt in chapter 8 of the debian manual which can be found at

I would personally recommend using grub for multidisk. apt-get install grub then update-grub and then go and look in /boot/grub. Look at device.map to find out what partitions have been identified and then edit menu.lst accordingly. There are good examples of how each system is setup in menu.lst
