I'm using Debian 3.02 Woody

Can someone tell me how to add/remove scripts/daemons which boot (like samba, nfs, etc).

First of all, most things that start on boot are generally there because the software isn't all that useful if it doesn't. So, you must ask yourself if you should just remove the software first instead of keeping it and disabling it. Then if you've decided to keep the software but not let it start on boot, read the man page for update-rc.d.
