Comparison with Ubuntu

I use Ubuntu Breezy now, and I know it's based on Debian. If I change my sources.list to the Sarge packages and dist-upgrade, should most stuff still work?

No.
First of all, Ubuntu is build out of testing/unstable and not stable(sarge).
Apart from that, Ubuntu also made a lot of packages itself. These packages are usually presented in in unstable as well, but wouldn't work without rebuilding them for Debian. If you really need something that's not available in Ubuntu Use the packages from testing/unstable. I also recommend to use it src packages and rebuild it yourself. Mixing repos can really screw up your system.
