You could try, but that likely would try to pull down way too much, ie C library updates.
Any way you go you're going to have to watch it for security updates. You could build straight from source if you want.
What I'd do is run
apt-get build-dep apache2, then add a deb-
src line for testing, apt-get update, apt-get source -b -t testing apache2, then dpkg -i the resulting apache2*deb file(s). This will pull the apache2 sources from testing and build it on your lenny environment without needing anything else from testing.
