Mate popup launcher
I would like to edit the programs in the popup launcher, however, I cannot find info on how to do this. There are several programs I run most of the time that are not there. Additionally, there are several programs in the launcher that I never use. Any help and/or links to help files would be greatly appreciated.

I have to confess that I've never heard that term before. What is a "popup launcher"?

Popup launcher is the mini menu that pops up when the mouse hoovers at the bottom center of the screen. Maybe popup is the wrong term. It however contains a selected number of program launching icons.

When you right click on the pop-up panel, what does it say? It sounds as if you may have Cairo or some similar dock/launcher installed.

Sounds similar to what is often referred to as a "Dock," but docks normally stay on the screen. Mac OSX has a big dock in the bottom of the screen. I find it quite irritating.
Thanks for teaching me something.

Still looking to edit its content
I am using Calculate Mate. Right clicking only gives me a mini menu for whatever item is closest to the pointer. There should be an application to edit the contents or a configuration file to manually edit. I have searched and searched to no avail. Any help would be really appreciated.
