New to Linux

I understand that Windows Server 2003 needs 512 meg to run properly. I am installing VMware ESX for the first time and to my understanding it will take back that memory that Windows does not use or need. What is the minimum that Linux needs to run on a server? Also, I am going to install VMware Infrastucture Client on my machine to install,monitor and configure Windows Server 2003 from my pc. I have created two storage blocks from an 800 gig hard drive. One is 60 gig and the other is 740 gig. I will have to install Windows Server 2003 four times on the 740 gig storage. What are some of the common problems that I will run into and some of the quick fixes that I can use?
