I used to use amarok to play my audio, but ever since I switched to online streaming, I rarely play my local music anymore. When I do, I usually just pull up audacious since it's usually just a song or two and I don't need everything amarok offers.
My Main box doubles as a DAW so I want a rather niche type player, one for example that supports LADSPA and LV2 plugins but is not complicated by also being a recording or editing device. For these reasons I still use Aqualung.
DeaDBeeF, every time. Plays local tracks, AND handles streaming from a RadioTunes a/c via .pls. Has a pretty good equalizer, and more options than you can shake a stick at, in a very small, compact package.

Yet another cmus user.
I also wrapped a lua script around aucat(1) (which could be modified to work with aplay(1)
So I guess OpenBSD's aucat is my second favourite. On Linux aplay and arecord serve my needs.
I also use cdio on BSD, and vlc to play my cds on Linux.
I'd vote for 'play' (alias of 'sox') if it was on the list. I'm surprised it isn't -- it's simple to use but comprehensive, uncluttered, easy to run from scripts, runs foreground or background ... . (And it's easy to install on an MS system, say if away from home for a while, where it knocks Win Med Player into the proverbial cocked hat.)
