While what you say of Kubuntu is true, this doesn't apply Xubuntu as well.

Kubuntu is a metapackage that include the KDE base and a few applications. The KDE metapackage includes the KDE base and a [b]lot[/] of other applications.

On the other hand, if you install just XFCE4, you'll get just XFCE4. If you install Xubuntu-desktop, you'll get XFCE4, plus a few plugins and such (say, a taskbar).

I don't think there is really a wrong or right answer when it comes to which or how much each desktop manager you should install. I personally like just pure gnome, with a few apps that aren't gnome or kde specific. I don't care much for most of KDEs stuff, its alright, but it feels bloated and heavy to me when I use it. On the other hand I think Xfce is too minimal, along with Fluxbox. Gnome feels sorta like the middle guy, full featured and what i'm used to, but still light enough that I don't feel burdened by it.

If I were you, and I've done this before. Do a server install of Ubuntu, and then install your favorite manager from there. After you have that up and running, install any extra apps you need. If after that you miss KDE, or which ever one you didn't install, then add it on. This is Linux after all, it all about the freedom to choose!
