You could run Windows in a virtual machine or just tests your sites from a Windows machine.

Run virtualbox. Using virtualbox you can use virtual host networking feature to connect to your "server" from the "guest" operating system.

You will usually connect using the IP address from the guest OS.

I recently downloaded the Windows version of Apple Safari and installed it with wine on my Ubuntu box. The rendering works well so that will give you another browser platform to debug with. I found that   isn't recognized by Safari although is in IE and Firefox. I don't have a answer for you with regards to IE7. I hand code all my sites with a subset of standards compliant HTML that I've found works virtually the same on IE6, Firefox, Epiphany and Safari. IE7 seems to be happy with this approach as is my Nokia N810. Thanks to MS a single way to embed videos is a problem. I found this Javascript code on Google that works for evry thing I've tried.
