Scheduling automatic updates as root without user intervention

I'm setting up some computers as kiosks, and would to scedule updates to be downloaded and installed without the user having to enter their sudo password, perhaps at midnight or something like this.

What is the quickest way to do this on ubuntu?

system > administration > software sources - you specify frequency of updates and which ones to get... you can install security updates in the background.

or use cron to run an update script.

Thanks, will look more into this.

What would be contained in an update script...just an apt-get update all ?
