The "native gnome interface" is just another theme. Ubuntu took it and only modified the colors basically.
You could run just icewm or fluxbox instead of gnome. They are small and fast, but not as comfortable.
But then again: you would still use the applications and gain almost nothing in the end.
Xubuntu could be a way - it uses xfce for its default desktop, which is lighter on recource demands.

As for startup apps you need or don't need:
please see the documentation on how to enable/disable some you (don't) want.

Go to: system > preferences > startup applications, and disable anything from starting up that you don't need. I disable:
bluetooth --since I don't need that.
check for new hardware drivers --I read that that is a bit of a resource hog, and nobody needs to check for new hardware all the time anyway.
evolution alarm notifier --I don't use evolution.
gnome login sound --I can live without the drums
print queue applet --no printer here.
update notifier --I check for updates manually with apt-get.
There may be other things I could disable. I don't know what some of the items are, so I leave them alone.

I also disable desktop effects under: system > preferences > appearance > visual effects tab.
Also, see this thread about disabling services with sysv-rc-conf:
http://ubuntuforums.org/showthread.php?t=89491
These suggestions will not get you a huge speed increase, but they may save some system resources though.

There are lightweight distros based on Ubuntu. They don't use gnome though:

And welcome to the LQ forums!
