Then OP can grab the Ubuntu Trusty 14.04 kernel source package and build for himself using the config of binary kernel; but enabling ext2 in config.

And use whatever tool the distro provides to make a initramfs image and boot them with bootloader.

Whatever the OP feels is easy.

I slightly remember reading in the news websites that some distro was removing support for ext2 all together. Was that Ubuntu I don't know.

I think Ubuntu has paid support as well as support forums. The Ubuntu forums may have some posts about this problem.
