If you are planning on using Slackware w/o an X-Windows interface, I believe you only need the first CD for this (at least it was this way prior to the 11 release). The majority of the second CD contains the X-Windows packages, mostly comprised of KDE packages. Although, if you are going to be using something other than KDE, you can skip this CD and install something such as Dropline Gnome separately. I'm not certain if lighter X-Windows versions such as Fluxbox are on the second CD as well.
No, Gnome is not on the CD's/DVD, you'll have to download and install it yourself.
BTW, I don't know how minimalistic you want to install Slackware, but on the second CD are a lot of goodies too ( Checkinstall, K3b, slackpkg, Blackbox, Gaim, Gimp, etc), so I would certainly recommend that CD.
Slackware dropped Gnome from the distro some time ago. You can manually install it if you wish. You may also be interested in Dropline Gnome. Check it out
