Under Linux I don't know how to re-label VFAT. I do know how to make a volume name when you create the fast file system using something like mkfs.vfat:

sudo mkfs.vfat -n <volume-name> <partition>
Another option I thought was under MS-DOS, Windows Command Prompt, or just Explorer, can't you rename the volume there?

That link says
dosfslabel is included in the DOS tools which give you mkfs.vfat and thus allows you to change the volume label. I just don't have a disk to try that on, nor have the inkling to experiment much. Seems like a perfectly valid thing to do.
