Running linux in stealth mode


I checked snort manual. there is one part that mentioned about running snort in stealth mode. it's said that stealth mode can be achieved on a linux system with 2 network interfaces, eth0 connecting to our lan and eth1 connecting to the outside world (internet), by bringing eth1 up without assigning an ip address. They said by doing this attacker won't be able to find our host because it has no ip.

My question is: How can this linux box communicate with the outside world ?
