Have you installed the nvidia drivers? If you do that and run nvidia-setup, it may be fairly obvious how to do it (I've only set it up on v5 and with a different nvidia card)
Solved!
I connected second monitor, went to INIT 3
reinstalled the nvidia driver then ran NVIDIA X Server Settings (as root). The monitors wre in the "X Server Display Configuration" section. I enabled the second display and voila, life is good. Thanks for the quick rsvp!
