Centos is really Red Hat with extras.

I just created a live Centos CD and it booted up without any issues.

What I would like to know is how to proceed with the installation on to my hard drive. I allocated a 14GB of space on my hard drive for the installation. Do I have to create filesystems first with say Partition Magic (stand alone)...what's next.

I'm a newbie and some direction on how to get started with this will be appreciated.

Also, I noticed that Suse now also has a live CD for installation. Is this becomming a common practice?

that you can't install from the live-CD.

You can use unetbootin

to do a simple net-installation of CentOS5.1 if you have either windows or another linux distribution alread installed and you have an internet connection.

Live-CDs are becoming very common for linux distributions. It allows you to see if a particular distro recognizes and correctly configures your hardware before you install.

Most live-CDs will let you non-destructively repartition your hard drive to make room for linux when you install it.
