track the messages traveling between two Clients


Hi Guys,
Iam having little exposure to Linux. Can anyone guide me to track the messages traveling between two Clients(Say Client1 and Client2). When Client1 sent a message(Hi) to Client 2, In between DEVEL(Hacker) should track the Message and modify the message ("Hi" to "Hai") and then sends the message to Client2. Please guide me in this process. this is nothing but Man In the Middle Attack. The Technology in which the this secure Chat application developed is JAVA. If this happens using Windows please tell me the process. If it is Linus please guide me.
