You can use arecord or sox to capture sound.
And you can get file format you want from date command. Hint, do following in your terminal:
echo `date +%Y%m%d`.wav
Anyway, you'd need some basic bash scripting skills to tailor all this to you needs. If machine is idle, you can produce mp3 files automaticaly (and thus save hard drive space).
You need to read man pages (at least to find what you need) of the following programs:
sox
lame
And find bash scripting guide of some sort on the Net. There are folks who could do this easily for you, but once you learn how to do it yourself (and it isn't hard, it'll take you one afternoon) you'll be able to do all kind of stuff yourself...
