How to use skbuff to scan every byte of the payload of an UDP packet?

Hi,
For example:

struct sk_buff *sb=*skb

I can get source IP of a packet
sb->nh.iph->saddr

Are there any way where I can use sb to scan every byte of the payload of a UDP packet?

Please advise
