Darwin OS, the core of Mac OS. Released by apple in binary form until version 8.0 which is the equivalent of OSX 10.4.
I have installed it on my machine and it runs nicely. I am trying to get it up to a point where it is more useful, GUI running, updated kernel, updated compiler, etc... I would also like to see about updating the installer CD with the updates.
I have made some headway:
I have successfully updated the kernel from 8.0 to 8.2
I have successfully updated a few important packages such as cctools
I have successfully updated the installer CD with the newer kernel
I am having trouble:
building jam on darwin
updating the kernel further
installing X or any other GUI
compiling a package manager such as macports or fink
However, I am running into some problems, and I could definitely use some help if anybody was willing to spend time working on this.
Anybody interested on helping develop this old apple system into something more modern? Apple has released a lot of source code already, so most of the work is done, we just need some collaboration to get stuff compiled and working. and maybe possibly setting up some kind of project website.
OpenDarwin is long gone, PureDarwin never really worked, and now their downloads are gone, and GNU/Darwin is also down, and its maintainer doesn't respond to my emails.
Some resources for getting started:
Darwin installer ISO files:
www.opensource.apple.com/static/iso/
Darwin source code:

Darwin runs pretty well in qemu.
Anybody that wants to help and be part of an opensource project is welcome, I will share all my progress with anybody that is interested.
