virt viewer or spice client. on linux, simply install the spice-xpi package, and that will automatically start a spice client to your guest, when you access the user and admin portals with firefox

I don't understand the question here.
RHEV can use Active Directory, it can also use IPA. You can have one or miltiple virtual disks attached to a RHEV VM.

Spice is actually the best performing multimedia enabled remote access protocol, if properly configured. Go over the administration guide for RHEV to see if you missed any requirements. I would guess you don't have the QXL driver installed in your guests, but the guide covers everything
As for the actual difference between desktop and server VMs - they are in the enabled features. Desktop VMs can have multiple displays, can be deployed as pools and can be assigned to VDI users, and accessed through the user portal. Server VMs have server features, like HA for example.
